Making manicotti from scratch may seem intimidating, but it’s actually quite a simple and rewarding process. However, never fear, I will walk you through each step of the process to help you create a delicious, homemade manicotti dish that will impress your family.
What Is Manicotti?
Manicotti is a classic Italian dish that consists of large pasta tubes filled with a delicious mixture of cheese and sometimes meat, then baked with marinara sauce. Then, top it with cheese, when baked, the cheese gets all bubbly and browned! What a comforting dish!

So, Manicotti can be made with meat or as a vegetarian version with just cheese. Although, we are not vegetarians, we do love to rotate meatless meals into our weekly dinner routine. So, this manicotti recipe is perfect!
What Kind Of Sauce Goes With Manicotti?
I prefer to make my own Marinara sauce from scratch, however, there is no shame in using a jar of sauce when you are in a hurry. I won’t judge you, I promise! But, if time allows, and you want to make your own sauce, which is actually quite easy to do, HERE is a great Marinara recipe to get you started. Also, you can customize it to your taste, or with what you have on hand.
How To Make Manicotti Pasta Sheet Noodles From Scratch
I have a wonderful Pasta From Scratch Recipe HERE. It works so well as any pasta, especially when it is rolled out into sheets, so I can make Manicotti tubes. I have used this pasta recipe both for by hand mixing, and in a mixer. This is also a great recipe to use in a pasta maker, that is what makes it so versatile! So, all you need is ONE pasta recipe that will work for all pastas!
Ingredients To Make This Cheesy Manicotti From Scratch
- 10 Manicotti pasta tubes or pasta sheets
- 16 oz of cottage cheese (you could use Ricotta if you prefer)
- 1&1/2 cups of shredded mozzarella cheese (Divided)
- 1/2 cup of grated Parmesan cheese
- 1 egg
- 1 tbsp. of chopped fresh parsley (or 1 tsp dried parsley)- You could use Spinach here is you like.
- 1 tsp garlic powder
- 1/2 tsp. of salt
- 1/2 tsp. of fresh cracked black pepper
- 1/4 tsp nutmeg
- 16oz of your favorite marinara sauce, or homemade sauce
Instructions How To Make This Manicotti From Scratch
- Firstly, Preheat your oven to 350°F.
- Then, in a Medium bowl, combine the cottage cheese, shredded mozzarella cheese, grated Parmesan cheese, egg, parsley, garlic powder, nutmeg, salt, and black pepper. Then, mix well to combine.
- Fill each manicotti tube with the cheese mixture. (You could use a spoon, although a piping bag would be a great option as well.)
- Then, pour a small amount (1/2 cup) of the marinara sauce on the bottom of your baking dish. Arrange the filled manicotti tubes in a baking dish on top of the sauce.
- Cover the Manicotti tubes with marinara sauce, also making sure they are fully covered.
- Bake for 30-40 minutes, or until the cheese is melted, browned, and bubbly.
- Remove the manicotti from the oven and let it rest for a few minutes before serving.

Will you tell me how thick you made the pasta sheets and approximately how long. I have a pasta machine for my Kitchen Aid mixer, so I can make the sheets. Or is there a YouTube video that would show me? Remember, I’m new to this whole grain grinding way of life. 🙂

Thank you! We use the Kitchen aid with our pasta sheeter as well! I believe it is number 2 thickness (the thickness you would use to make ravioli) For ours, we just made the long sheets, and cut them into about 4×8 inch rectangles, and filled them and rolled them up!
