Making manicotti from scratch may seem intimidating, but it's actually quite a simple and rewarding process. Never fear, I will walk you through each step of the process to help you create a delicious, homemade manicotti dish that will impress your family.

Ingredients
  

  • 10 Manicotti pasta tubes or pasta sheets
  • 16 oz cottage cheese you could use Ricotta if you prefer
  • 1&1/2 cup shredded mozzarella cheese Divided
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 1 tbsp. chopped fresh parsley (or 1 tsp dried parsley) You could use Spinach here is you like
  • 1 tsp garlic powder
  • 1/2 tsp. salt
  • 1/2 tsp. fresh cracked black pepper
  • 1/4 tsp nutmeg
  • 16 oz your favorite marinara sauce or homemade sauce

Instructions
 

  • Preheat your oven to 350°F.
  • In a Medium bowl, combine the cottage cheese, shredded mozzarella cheese, grated Parmesan cheese, egg, parsley, garlic powder, nutmeg, salt, and black pepper. Then, mix well to combine.
  • Fill each manicotti tube with the cheese mixture. (you can use a spoon or piping bag)
  • Then, pour a small amount (1/2 cup) of the marinara sauce on the bottom of your baking dish. Arrange the filled manicotti tubes in a baking dish on top of the sauce.
  • Cover the Manicotti tubes with marinara sauce, making sure they are fully covered.
  • Bake for 30-40 minutes or until the cheese is melted, browned, and bubbly.
  • Remove the manicotti from the oven and let it rest for a few minutes before serving.
