If you are like my family and LOVES the amazing flavor of Apple Cider, then you probably want a more intense Apple Cider flavor in your donuts, right? Well, lucky for you I am here to teach you how! You will need to start with about 3 cups of your favorite apple cider, and boil it down until it becomes about 1 cup. This reduction will intensify the apple cider flavor of your fresh milled flour donut. Just make sure to let it cool a bit before adding it to the batter.

I like to roll my apple cider donuts in a cinnamon sugar mix. However, they are quite delicious without any additional ingredients on the outside. So, if you are looking for a lower sugar option, just plain are amazingly soft and moist. But, if you are looking to sweeten it up a bit or spice it up a bit, here are a few options:

They won’t be as adorable with the donut shape, but they will still taste amazing! Then, the next time you go to make them, you can pick up some donut pans! I love to use THESE pans, they are a good quality, the donuts come right out, and they are very affordable! Also, I write all my recipes using these size pans, because I know there are several different sizes out on the market. Some alternative cooking vessels could be:
- Muffin Tin: One of the most common alternatives is to use a muffin tin. Pour your donut batter into a round shape and place it in the muffin cups, but only fill up about half way. You won’t get the classic donut shape, but you’ll still have delicious, round donuts.
- Mini Muffin Pan: These mini muffin pans are the perfect alternative, because the baking time ends up being pretty close to the same, and you can sprinkle the top with the cinnamon and sugar coating, and they turn out so cute!
- Mini Bundt Pans: If you have mini Bundt pans, they can be used to create a similar shape to donuts. The resulting treats will have a decorative design on the top.
- Brownie Bar Pan: Similar to the muffin tin, this pan will offer a square shaped treat rather than a donut shape.
- Donut Maker: If you have a donut maker appliance, it’s specifically designed for making donuts and will produce the classic shape without needing a donut pan. The recipe may vary with cook time, and amount of donuts it makes, because donut makers come in many different sizes.
Ingredients To Make Fresh Milled Flour Apple Cider Donuts
Ingredients for The Apple Cider Donuts
- 2&1/4 cup Fresh Milled Flour (280g) (I used half spelt & half soft white.)
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 3/4 tsp salt
- 1 cup apple cider (240g)
- 6 TBSP butter, melted (84g)
- 1.5 TBSP olive oil (20g)
- 1/3 cup packed brown sugar (75g)
- 1/4 cup sugar (50g)
- 2 eggs, room temperature
- 1 tsp Vanilla Extract
Cinnamon-Sugar Coating Ingredients
- 1/4 cup butter, melted (57g)
- 1/2 cup sugar (100g)
- 2 tsp ground cinnamon
- 1/8 tsp salt
- *optional- 1 tsp apple pie spice (For a more intense spiced flavor)
Instructions To Make Baked Apple Cider Donuts with Fresh Milled Flour
- Firstly, mill the flour.
- Preheat the oven to 350*F
- To the flour, add baking powder, baking soda, cinnamon, nutmeg, and salt. Then, stir to combine.
- To a Large mixing bowl, add apple cider, melted butter, oil, brown sugar, sugar, eggs, and vanilla. Then, whisk until smooth.
- Next, add the dry ingredients into the wet ingredients, and stir to combine. It should be a smooth batter.
- Spray donut pan with oil.
- Then, fill the donut pan wells about 2/3 full. I like to use a piping bag, I think it makes it easier. But, piping bags are not required. You can grab some inexpensive disposable ones HERE.
- Bake for 12-14 minutes. The edges of the donuts should be slightly pulling away from the edge of the pan when done.
- Let the donuts cool in the pans for 10 minutes. Then, transfer them to a wire rack to finish cooling.
- Continue with another batch until all the batter is gone.
- After the donuts have cooled (about another 20 minutes of cooling on the wire racks) make the cinnamon and sugar coating.
- To make the cinnamon sugar coating, melt the butter.
- In a separate small bowl, mix together the sugar, cinnamon, salt, and apple pie spice if you are using.
- Brush the melted butter on the apple cider donuts all over, then place the donut in the cinnamon sugar coating. Coat the donut, then gently shake off any loose cinnamon sugar. Repeat with each donut.
- Lastly, enjoy!
How To Store These Fresh Milled Flour Apple Cider Donuts
To store these fresh milled flour apple cider donuts just cover them and keep at room temperature for 2-3 days. If you want to store for a longer period of time, then I recommend you freeze them. To freeze these donuts, make sure they have cooled completely, and freeze same day they are baked. Then, to enjoy later, let them thaw for about 2 hours, and you can coat them at that time.

Question, your recipe says 1 cup AC, but your video looked like you added another 1.5 cups (while you were talking about the apple farm) after that initial first cup that was mixed in the wet ingredients. Hi Kara, These were fantastic! I am definitely going to make these again. Would you recommend trying to make these donuts with 100% Spelt too? Would I need to adjust other things in the recipe if I went for 100% Spelt? thank you!
I have made them with 100% spelt, they may need an extra TBSP of liquid or so, just because spelt seems to be thirstier than soft white wheat. I hope that helps. But, now that you have made them, you know the consistency of the dough, so if it seems dry add a tiny bit more of the apple cider. Happy Baking!
