Candy Canes & Chocolate, The Best Cinnamon Rolls For The Holidays

I just love candy canes and chocolate together, the hint of peppermint brings back so many warm Christmas memories for me. Sipping hot chocolate by the cozy fire, and dipping a candy cane while building a puzzle with family just brings happiness to my heart. This Chocolate Peppermint Holiday Cinnamon Roll made with Fresh Milled Flour Recipe has the perfect amount of peppermint, not too overwhelming, but also you can definitely taste it. If you want a stronger peppermint flavor, you could add 1/4 tsp of peppermint extract, but I omitted it in the recipe, because the peppermint from the crushed candy cane mixture really shines through nicely.

Where Are All The Candy Canes?

If you have been searching for Candy Canes, especially the peppermint ones, then you are not alone! I also had such a hard time finding them this year. There has been a supply chain issue for the last two years. So, I went to 5 different stores, then finally, I stumbled upon some! Ahhh, at last! I bought two boxes (I didn’t want to hoard and buy them all, but I needed more than one box, lol.)

Peppermint candy canes and a chunk of dark chocolate is all it took to dress up this delicious, and festive cinnamon roll!

Crushed Candy Canes!?

While I rounded the corner in the grocery store (It was Winco by the way), I saw what I didn’t know existed, until now, of course. It was like a bright light was shinning on them, and the angels were singing. They had peppermint candy canes, already crushed! And, bonus, they were all natural with no artificial flavors! Perfect! I bought 1 bag, but after using them, I may go back and grab another bag or two to have on hand. Because, I have some other peppermint recipes I am working on.

Does Peppermint Go With Chocolate?

Yes, Peppermint absolutely goes with Chocolate. This flavor combination has been paired together since the 16th century! Peppermint is usually a flavor that comes around the holiday season, because of the infamous candy canes! Peppermint hot chocolate makes for a great warming winter drink. I love how the peppermint and chocolate compliment each other.

Does Cinnamon Taste Good With Peppermint?

Cinnamon and peppermint are both known to have strong, distinguishable flavors. But, when they are used in balance, they complement each other quite beautifully. Often times, these two flavors are used around the holidays, which is great because that is also the time of year germs like to spread. Both Cinnamon and Peppermint have antibacterial properties, as well as antiviral properties. Especially when you use the Ceylon Cinnamon, which is loaded with antioxidants. I had to show how beautiful these cinnamon rolls were even before baking.

Ingredients For This Chocolate Peppermint Cinnamon Rolls With Fresh Milled Flour Recipe:

  1. 1/2 cup milk (100g)
  2. 3/4 cup water (150g)
  3. 1/2 cup brown sugar (105g)
  4. 1/2 tsp salt
  5. 2 TBSP butter
  6. 2 TBSP Light Olive Oil
  7. 3&1/2 cup flour – Mill 2&1/4 cup hard white wheat berries (465g) to get about 3&1/2 cup of fresh milled flour
  8. 2 room temperature eggs
  9. 2&1/4 tsp instant yeast (1 packet)
  10. 1 tsp vanilla I love to use my homemade here

Ingredients For Filling:

  1. 4 TBSP melted butter
  2. 1 TBSP Cinnamon
  3. 1/4 cup Brown Sugar
  4. pinch of salt
  5. 1/8 cup cocoa powder
  6. 1/8 cup crushed candy canes

Instructions For Making This Chocolate Peppermint Cinnamon Rolls With Fresh Milled Flour Recipe:

  1. Add milk, water, brown sugar, salt, butter, and olive oil to a medium sauce pan, and cook on medium/low until the sugar and butter is melted. (You don’t want to skip this step, because cold milk will inhibit your gluten formation. Then set it aside to cool slightly.
  2. Mill 2&1/4 cup of hard white wheat berries(465g), this should make about 3&1/2 cups of flour.(you could use other varieties if you wish)
  3. After the milk / sugar mixture has cooled below 100 degrees F, pour it in a stand mixer bowl.
  4. Next, put the fresh milled flour into the same bowl, and begin to mix on low until it is mostly combined.
  5. Now crack your eggs, one at a time, into the mixture, and mix in each one to incorporate. Then add the vanilla.
  6. Once it is all incorporated, let the dough sit for about 10 minutes.
  7. After 10 minutes of resting, now add the instant yeast. Mix it in on low for a couple minutes.
  8. Now, your dough is ready to knead. Knead the dough on level 2 until it passes the window pane test, which you can see in my video here or the photo below. (This could take up to 20 – 25 minutes with fresh milled flour – don’t rush this process!)
  9. After dough passes the window pane test, cover it and let it sit for 1 to 2 hours.

After The Dough Passed The Window Pane Test

  1. While the dough is rising, make the filling. Melt butter in a microwave safe bowl, then add sugar, cinnamon, a pinch of salt, cocoa powder, and crushed candy canes, mix to combine.
  2. Once dough has risen double, on a lightly oiled work surface, press your dough out flat into a 15 x 17 rectangle.
  3. Then, evenly distribute filling all over the top, and from the long side, roll the dough into a log.
  4. Divide dough log into 12 even disks.
  5. Place the disks on a lined 9×13 baking pan and cover. Let rise for 40 minutes (or overnight in the fridge)
  6. Bake at 350 degrees F for 18 – 20 minutes. (If using the refrigerator method, set the shaped dough on the counter for 1-2 hours for it to come up to room temperature. Then bake.
  7. Lastly, Enjoy!

You could use white flour for this, but you may need to adjust your flour amount.
Any hard wheat variety would work in this recipe.

    1. I would take them all the way to shaping, then freeze. Let them thaw overnight in the fridge, then the next day let them sit at room temperature for 1-2 hours or so. Then bake. Let me know what you think!
