Vanilla Wafers have such a nostalgic flavor for me, but for some reason sometimes I forget about them. But, even after just one bite, I remember how deliciously simple they are! So, naturally, I had to master a recipe for them.

In this picture you can see, they were not smooth, so in the next picture I show you how I got my hands wet, and rolled them, then flattened them to make them the perfect Vanilla wafer cookie shape.

Ingredients To Make Vanilla Wafers with Fresh Milled Flour

  • 1/2 cup softened butter 113g
  • 2/3 cup sugar 130g
  • 1 large egg, room temperature
  • 1 TBSP Vanilla Extract (Learn how to make your own vanilla extract HERE)
  • 2 cups Fresh milled flour 240g (I milled 1&1/3 cup soft white wheat berries)
  • 3/4 tsp baking powder
  • 1/2 tsp salt
  • 1 TBSP whole milk

I am rolling the dough balls out with wet hands, then flattening them to create the vanilla wafer cookie shape.

Instructions For Making Fresh Milled Flour Vanilla Wafers

  1. Firstly, Mill the Flour
  2. Add baking powder and salt to the flour, and mix.
  3. In a separate mixing bowl, add softened butter & sugar, then beat with a mixer until creamy and light in color. Scrape down sides of bowl as needed.
  4. Then, add one egg and the vanilla extract, beat to combine.
  5. After incorporated, add the flour mixture into the butter mixture.
  6. Stir on low speed to combine, and then add the milk. Stir to combine again.
  7. Cover, and refrigerate dough for 10-20 minutes.
  8. While dough is resting, Prepare cookie sheet with parchment paper.
  9. Preheat oven to 375*F
  10. Then, after the dough has rested, wet your hands with a little water, and scoop out about 2 tsp of dough. Roll the dough in your wet hands to form a small ball, then flatten the ball slightly.
  11. Place dough disks on lined cookie sheet about 2 inches apart from each other.
  12. Bake for 12-14 minutes or until cookies are a light golden brown around the edges.
  13. Allow to cool for 5-10 minutes on a baking sheet, then transfer to a cooling rack to cool completely.

How To Store Fresh Milled Flour Vanilla Wafers

To store these fresh milled flour vanilla wafers, put them in an airtight container for up to 4 days. For longer storage, place in a freezer safe bag or container, and freeze for up to 4 months. The cookie dough balls also freezes well (make sure to freeze them as disks, not cookie dough balls.) Just bake for a few minutes longer than directed if baking from frozen.
