Ultimate Blueberry Cake Donuts Made With Fresh Milled Flour

These Blueberry Cake Donuts made with fresh milled flour are simply irresistible! Ever since the weather started to turn just a bit chilly, I can feel fall in the air. But, it is hard to let the summer go completely, so I decided I would make something delicious with the essence of summer, but the comfort of fall. So, these Extraordinary Fresh Milled Flour Blueberry Donuts were born!

When I was thinking about blueberry flavor, I didn’t want these donuts to just have a burst of blueberry here and there, I wanted the blueberries in each and every bite! And, boy oh boy, I was not disappointed with this choice.

This was such a fun batter to make, and watching the transformation of color happen from bright purple, to an almost black donut! These are a great choice for some fun Halloween Donut Surprises!

How To Enhance The Blueberry Flavor in these Fresh Milled Flour Donuts?

So, I decided to enhance the Blueberry flavor, I would blend up the blueberries so that they were dispersed throughout the donut. Depending on the sweetness of your blueberries, you may or may not want to add the sugar glaze on the outside. I thought they were perfectly blueberry sweet as is without the glaze. But, my husband, and son both wanted the glaze. Well, I guess you know by now if you have been following me, that I like versatile and customizable recipes. Other things to enhance flavor could include:

  • Blueberry extract: You could use just a few drops of blueberry extract to enhance the blueberry flavor in these donuts.
  • Dried Blueberry Powder: Sprinkle a bit of dried blueberry powder in the batter or the glaze for a flavor burst!
  • Add Lemon To The Glaze: You could add some lemon juice to the glaze to make a wonderful lemon blueberry combo.

Enjoy them plain, glazed, or with one of the options above. So, no matter what you decide, be prepared for a blueberry flavor burst!

Ingredients To Make Blueberry Cake Donuts With Fresh Milled Flour

Blueberry Donut Ingredients

  • 2&1/4 cup Fresh Milled Flour (280g) (I used half soft white & half spelt)
  • 1&1/2 tsp baking powder
  • 1 tsp baking soda
  • 3/4 tsp salt
  • 1 cup blueberries (150g)
  • 6 TBSP butter, melted (84g)
  • 1.5 TBSP Olive Oil (20g)
  • 2/3 cup sugar (134g)
  • 2 eggs, room temperature
  • 6 TBSP Yogurt, room temperature. (you can also use sour cream or buttermilk)
  • 1 tsp vanilla

Ingredients To Make The Glaze

  • 2 cups powdered sugar (240g)
  • 1/4 tsp salt
  • 1&1/2 tsp vanilla
  • 5-6 TBSP whole milk

So, we just like to dip the donuts right into the glaze, but you could pour it over top a well. Also, these donuts are pretty amazing even without the glaze!

Instructions To Make Fresh Milled Flour Blueberry Donuts

  1. Firstly, mill the flour.
  2. To the flour, add baking powder, baking soda, and salt. Then, stir to combine.
  3. Preheat the oven to 350*F.
  4. Spray your donut pans with oil.
  5. Blend the Blueberries in a blender or food processor until smooth.
  6. Then, pour the blueberry puree into a large mixing bowl.
  7. Add melted butter, oil, sugar, eggs, yogurt, and vanilla to the blueberry puree, and mix until combined.
  8. Then, add the dry ingredients into the wet ingredients, stir until smooth.
  9. In you sprayed donut pan, pour batter into the donut pan wells about 3/4 full. (Don’t overfill.) I really like to use a piping bag to put the batter into the pan, but it is not necessary.
  10. Bake on the center rack of the oven for about 12-14 minutes.
  11. Once baked, let the donuts cool in the pan for about 10 minutes.
  12. Then, remove the donuts onto a wire rack to finish cooling, this normally takes about 20 minutes or so.
  13. While the donuts are cooling, you can make the glaze. (*glaze is optional)
  14. To make the glaze, mix powdered sugar, salt, vanilla, and part of the whole milk. Stir to combine and whisk until smooth. If the glaze is too thick add the rest of the milk a little at a time until it thins out to a drizzle consistency.
  15. Once the donuts have cooled to room temperature, dip each side into the glaze. Allow the excess glaze to run back into the bowl. Then, transfer donuts to a wire rack to dry.
  16. Lastly, Enjoy!

How To Store Fresh Milled Flour Blueberry Cake Donuts

To store these fresh milled flour blueberry donuts, just cover them and keep at room temperature for 2-3 days. If you want to store for a longer period of time, then I recommend you freeze them. To freeze these donuts, make sure they have cooled completely, and freeze same day they are baked. Then, to enjoy later, let them thaw for about 2 hours, and you can coat them at that time.

How Can I Make Baked Donuts Without A Donut Pan?

If you are craving these mouthwatering fresh milled flour blueberry cake donuts, but don’t have a donut pan, never fear, I have a few alternative options that may work in a pinch. They won’t be as adorable with the donut shape, but they will still taste amazing! Then, the next time you go to make them, you can pick up some donut pans! I love to use THESE pans, they are a good quality, the donuts come right out, and they are very affordable! Also, I write all my recipes using these size pans, because I know there are several different sizes out on the market. Some alternative cooking vessels could be:

  • Muffin Tin: One of the most common alternatives is to use a muffin tin. Pour your donut batter into a round shape and place it in the muffin cups, but only fill up about half way. You won’t get the classic donut shape, but you’ll still have delicious, round donuts.
  • Mini Muffin Pan: These mini muffin pans are the perfect alternative, because the baking time ends up being pretty close to the same.
  • Mini Bundt Pans: If you have mini Bundt pans, they can be used to create a similar shape to donuts. The resulting treats will have a decorative design on the top.
  • Brownie Bar Pan: Similar to the muffin tin, this pan will offer a square shaped treat rather than a donut shape.
  • Donut Maker: If you have a donut maker appliance, it’s specifically designed for making donuts and will produce the classic shape without needing a donut pan. The recipe may vary with cook time, and amount of donuts it makes, because donut makers come in many different sizes.

  • To the flour, add baking powder, baking soda, and salt. Then, stir to combine.
  • Preheat the oven to 350*F.
  • Spray your donut pans with oil.
  • Blend the Blueberries in a blender or food processor until smooth.
  • Then, pour the blueberry puree into a large mixing bowl.
  • Add melted butter, oil, sugar, eggs, yogurt, and vanilla to the blueberry puree, and mix until combined.
  • Then, add the dry ingredients into the wet ingredients, stir until smooth.

    Great texture but the flavor wasn’t the best. I used dried blueberry powder in the donut in addition to fresh. Still couldn’t taste blueberry. I think if I used all soft white maybe I’d have liked it more. The glaze was pretty strong powder sugar taste, even with adding blueberry powder.

    1. I am not sure how dried blueberry powder would affect the recipe, but these were extremely blueberry flavor forward for our family, and others who have tried it. Maybe try with a different batch of blueberries? These are great without the glaze as well if you want to skip it. To add even more blueberry flavor I mention in the recipe you can add blueberry extract. Happy Baking!
