Apple Cider Donuts with Fresh Milled Flour

Also, the level of apple cider is customizable to super concentrated, to just a subtle, yet delicious hint!

Ingredients
  

Apple Cider Donut Ingredients

  • 2&1/4 cup Fresh Milled Flour 280g (I used half spelt & half soft white.)
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 3/4 tsp salt
  • 1 cup apple cider 240g
  • 6 TBSP butter melted (84g)
  • 1.5 TBSP olive oil 20g
  • 1/3 cup packed brown sugar 75g
  • 1/4 cup sugar 50g
  • 2 eggs room temperature
  • 1 tsp Vanilla Extract

Cinnamon Sugar Coating Ingredients

  • 1/4 cup butter, melted (57g)
  • 1/2 cup sugar (100g)
  • 2 tsp ground cinnamon
  • 1/8 tsp salt
  • *optional- 1 tsp apple pie spice (For a more intense spiced flavor)

Instructions
 

  • Firstly, mill the flour.
  • Preheat the oven to 350*F
  • To the flour, add baking powder, baking soda, cinnamon, nutmeg, and salt. Then, stir to combine.
  • To a Large mixing bowl, add apple cider, melted butter, oil, brown sugar, sugar, eggs, and vanilla. Then, whisk until smooth.
  • Next, add the dry ingredients into the wet ingredients, and stir to combine. It should be a smooth batter.
  • Spray donut pan with oil.
  • Then, fill the donut pan wells about 2/3 full. I like to use a piping bag, I think it makes it easier. But, piping bags are not required.

  • Bake for 12-14 minutes. The edges of the donuts should be slightly pulling away from the edge of the pan when done.

  • Let the donuts cool in the pans for 10 minutes. Then, transfer them to a wire rack to finish cooling.
  • Continue with another batch until all the batter is gone.
  • After the donuts have cooled (about another 20 minutes of cooling on the wire racks) make the cinnamon and sugar coating.
  • To make the cinnamon sugar coating, melt the butter.
  • In a separate small bowl, mix together the sugar, cinnamon, salt, and apple pie spice if you are using.
  • Brush the melted butter on the apple cider donuts all over, then place the donut in the cinnamon sugar coating. Coat the donut, then gently shake off any loose cinnamon sugar. Repeat with each donut.
  • Lastly, enjoy!

Want A More Intense Apple Cider Flavor? Start with about 3 cups of your favorite apple cider, and boil it down until it becomes about 1 cup. This reduction will intensify the apple cider flavor of your fresh milled flour donut. Just make sure to let it cool a bit before adding it to the batter.

How To Store These Donuts- To store these fresh milled flour apple cider donuts just cover them and keep at room temperature for 2-3 days. If you want to store for a longer period of time, then I recommend you freeze them. To freeze these donuts, make sure they have cooled completely, and freeze same day they are baked. Then, to enjoy later, let them thaw for about 2 hours, and you can coat them at that time.
