Of course, you could throw these on the grill as well, but when the weather isn’t quite right, and you are craving something deliciously balanced on a stick. Seems like the alternative would be to pop these bad boys in the oven! I finished them off with the broiler function, so I could make sure the bacon got nice and crispy brown around the edges.

Ingredients To Make This Recipe

  • 4 boneless skinless chicken breasts, cut into 1 to 1&1/2 inch cubes
  • 1/2 TBSP Olive Oil (to drizzle over the chicken)
  • salt & pepper, to taste
  • 1/4 tsp Paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1 pound of bacon slices, cut in half
  • 1 pineapple, cut into 1-inch cubes
  • 1 Yellow or White onion, cut into 1-inch wedges
  • 4 to 6 Grilling skewers (I use metal ones, but if you have wooden ones, just make sure to soak them in water for 15 minutes before making.)

We chose to skewer the bacon wrapped chicken with onion and pineapple, but you could also pair with peppers, potatoes, tomatoes, etc.

Instructions To Make This Recipe

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with foil, then parchment paper. Also, I like to use a wire rack to elevate the kabobs off the bottom of the pan.
  2. Season chicken with olive oil, salt, pepper, paprika, garlic powder, and onion powder. mix it around to evenly coat the chicken before wrapping with bacon.
  3. Wrap bacon around the chicken piece.
  4. Then, thread bacon-wrapped chicken, pineapple, and onion onto skewers, alternating between each ingredient.
  5. Pack each ingredient close together so they stay intact.
  6. Arrange skewers on top of baking rack.
  7. Bake for 20-25 minutes, then turn the oven up to BROIL on the top rack for 1-2 minutes, or until the bacon is crispy and the chicken is cooked through.
  8. Remove from oven, and let sit for about 5 minutes before serving.

Tips For Making Bacon-Wrapped Chicken Kabobs With Pineapple

  • If using wooden Skewers, Make sure to soak them in water for 15- 30 minutes before threading the ingredients onto them. This will prevent them from burning in the oven.
  • You could also serve these with a Teriyaki Sauce or your favorite Barbeque Sauce.
  • You can also grill the skewers on a barbecue instead of baking them in the oven. Simply preheat the grill to medium-high heat and cook the skewers for about 10-15 minutes, turning occasionally, until the chicken is cooked through and the bacon is crispy.

At this point, these kabobs could be baked in the oven, or put on the grill. We had extra chicken, so we just made an extra chicken and onion kabob.
