Bacon-Wrapped Chicken Kabobs With Pineapple & Onions
Chicken Bacon Kabobs with Pineapple, Hawaiian style! These Skewers (kebabs) are so easy to make in the Oven! Of course, you could throw these on the grill as well, but when the weather isn't quite right, and you are craving something deliciously balanced on a stick. Seems like the alternative would be to pop these bad boys in the oven! I finished them off with the broiler function, so I could make sure the bacon got nice and crispy brown around the edges.

- 4 boneless skinless chicken breasts cut into 1 to 1&1/2 inch cubes
- 1/2 TBSP Olive Oil to drizzle over the chicken
- salt & pepper to taste
- 1/4 tsp Paprika
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1 pound bacon slices cut in half
- 1 pineapple cut into 1-inch cubes
- 1 Yellow or White onion cut into 1-inch wedges
- 4 to 6 Grilling skewers I use metal ones, but if you have wooden ones, just make sure to soak them in water for 15 minutes before making.
Preheat your oven to 400°F (200°C) and line a baking sheet with foil, then parchment paper. I like to use a wire rack to elevate the kabobs off the bottom of the pan.
Season chicken with olive oil, salt, pepper, paprika, garlic powder, and onion powder. mix it around to evenly coat the chicken before wrapping with bacon.
Wrap bacon around the chicken piece.
Thread bacon-wrapped chicken, pineapple, and onion onto skewers, alternating between each ingredient.
Pack each ingredient close together so they stay intact.
Arrange skewers on top of baking rack.
Bake for 20-25 minutes, then turn the oven up to BROIL on the top rack for 1-2 minutes, or until the bacon is crispy and the chicken is cooked through.
Remove from oven, and let sit for about 5 minutes before serving.
