Chicken Gnocchi Soup – Creamy & Delicious!
This chicken gnocchi soup is oh so creamy and delicious! I made this with my fresh milled flour gnocchi recipe HERE. This tasted even better than the Olive Garden soup, so this would be the perfect copycat recipe for it. This soup is hearty enough as a main course, or you could also use it as an appetizer, or side dish as well.
This soup came together pretty quickly, and we served it with a slice of my homemade sourdough bread, you can find that recipe HERE.
What To Serve With Chicken Gnocchi Soup
This soup is hearty enough to enjoy all on it’s own. But, you could also pair it with some other delicious options. So, here are some ideas to get you started.
- Warm, Crusty Bread – Perfect for dipping into the creamy soup. I have a wonderful sourdough Artisan loaf you can make the day before HERE OR I also have a no knead bread without sourdough HERE.
- Soft Breadsticks – A classic Olive Garden pairing. I love to use my pizza dough HERE for these, and brush with garlic butter after baking.
- Crisp Green Salad – Tossed with Italian or Caesar dressing for freshness. HERE is my favorite way to make a homemade Caesar Dressing.
- Caprese Salad – Fresh tomatoes, mozzarella, and basil with balsamic glaze.
- Roasted Vegetables – Add a side of seasoned roasted veggies.
- Freshly Grated Parmesan – Just keep it simple, and sprinkle on top for an extra cheesy finish.

Ingredients To Make Chicken Gnocchi Soup
- 3-4 boneless skinless chicken breast, cooked & diced 1.5-2# (We baked them at 350*F for 20 mins)
- 1/2 cup carrots, shredded or diced 70g
- 1 stalk of celery, diced 50g
- 1/2 onion, diced 75g
- 2 tsp garlic, minced 5g
- 1 TBSP butter 14g
- 4 cups chicken broth of your choice 960g
- 1 tsp thyme
- salt and pepper to taste
- 1 batch of my homemade FMF Gnocchi recipe HERE (OR 16 oz of gnocchi)
- 2 cups whole milk or heavy cream 480g
- 1 cup chopped fresh spinach 30g
Instructions To Make This Chicken Gnocchi Soup
- Firstly, cook the chicken if not already cooked.
- Then, prepare your ingredients chop, and dice all veggies.
- In a large soup pot, melt butter over medium heat, then add diced celery, carrots, onion, and garlic. Cook for 2-3 minutes while stirring.
- Add the cooked chicken to the pot, then add the broth and thyme and bring to a boil.
- Once the soup is boiling, then gently stir in the gnocchi. Boil for 3-4 minutes.
- Reduce the heat, and simmer for 10 minutes.
- Taste, and then add salt and pepper to your liking.
- Stir in the whole milk, and the chopped spinach, then cook for another 1-2 minutes, making sure to stir. Cook until the spinach is tender.
- Lastly, enjoy!
How To Store This Chicken Gnocchi Soup
If you have any chicken gnocchi soup left, then let it cool to room temperature. Then, place it in the fridge in a covered dish. It will last for up to 4 days.
