Popovers Made With Fresh Milled Flour In A Muffin Tin
These Popovers made with fresh milled flour are such a fun recipe to make! I make mine in a stainless steel muffin tin, and oh, what a delight to see them rise and pop up over the top! This is a great recipe to serve as a quick side dish, and best of all, it’s full of protein!

Do I Need A Blender To Make Popovers With Fresh Milled Flour?
In this recipe, I have a video where I show you how to make these FMF Popovers in a blender. This method is wonderfully easy, and ensures a light airy mix to help with the rise. However, a blender is not required for this recipe. You can alternatively whisk your mixture in a bowl until all lumps are gone, and the mixture has air bubbles forming. This may take a few minutes of heavy whisking. But, it will allow for the mixture to retain the light airy texture.

Fresh milled flour popovers are delightfully crisp on the outside and airy on the inside—perfect for both sweet and savory pairings. Here are some delicious ways to enjoy them:
Savory Ideas
- With Roast Dinners: Serve warm alongside pot roast, roast chicken, or beef tenderloin. Perfect for soaking up gravy!
- Stuffed with Eggs & Cheese: Split and then fill with scrambled eggs, melted cheddar, or even a poached egg and hollandaise.
- Soup Companions: Dip into creamy soups like tomato bisque, potato leek, or chicken noodle for a hearty meal.
- Brunch Boards: Add them to a breakfast spread with bacon, sausage links, and fruit preserves.

Ingredients To Make Fresh Milled Flour Popovers
- 3 TBSP melted butter 43g (You will add about 1/2 TBSP in each preheated muffin well)
- 1 cup fresh milled flour 120g (I recommend soft white wheat for these)
- 3/4 cup whole milk 180g
- 2 eggs
- 1/2 tsp salt

Instructions To Make Popovers With Fresh Milled Flour
- Firstly, mill the flour. I recommend using soft white wheat for this recipe.
- Preheat oven to 450*F with your empty muffin pan inside (on top of a baking sheet to catch any spillage). I recommend a stainless steel pan, like the one I use HERE. This is because a very hot pan is what makes this recipe work!
- Combine eggs, milk, salt, and fresh milled flour into a blender, and then blend until smooth and frothy. (You can make this without a blender, and heavily whisk the batter in a bowl instead.)
- Then, allow the batter to sit for about 5-10 minutes as the oven preheats.
- Once the pan and oven are preheated, then add about 1/2 TBSP of butter into each of the 6 muffin wells, place the pan back in the preheated oven for the butter to melt.
- Once the butter has melted, then pour your batter evenly into each buttered well. Fill each one up about 3/4 of the way, not full, they will puff up! You may not use all of your batter, it depends on the size of your eggs.
- Bake the FMF Popovers at 450*F for 18-20 minutes, then without opening the oven, reduce the heat to 350*F, and bake for 10 more minutes. (It is important to leave the oven closed during baking.)
- Once done and browned on top, then remove them from the oven and serve. They will deflate pretty quickly as they cool.
- Lastly, enjoy!

Can I Store Fresh Milled Flour Popovers?
While I recommend serving these fresh milled flour popovers immediately, while still warm. This will ensure the best texture and flavor. But, if you happen to have some leftover, you can store them at room temperature for a couple day. To do this, let them cool completely. Then place them in a paper bag or wrap loosely in a clean kitchen towel. This helps prevent sogginess by allowing steam to escape.
Alternatively, you could freeze them Let cool completely. To do this, wrap individually in plastic wrap or foil, then place in a freezer-safe bag for up to 1 month. But again, best results are to serve right away while hot and fresh.

How long would you suggest cooking if I have an actual popover tin?
I would try baking at 450*F for 20 minutes. Then reduce the oven to 350*F and bake for another 15–20 minutes. Let me know how it goes! 🙂
