Alternative Ways To Use This FMF Pancake Mix

Add Buttermilk Powder To The Dry Mix

If you want to add 1/2 cup of buttermilk powder to the mix, then you can just add 2&1/3 cup water, eggs, and melted butter.

Make Waffles With This Pancake Mix

Yes, you can even use this mix to make waffles! But, you will only need to use 2 cups of milk, 2 eggs, and 1/4 cup melted butter or oil. If you like waffles with a crisp outside, I recommend using spelt. But, if you like soft waffles, the soft white is the best option.

Although these pancakes are fantastic all on their own, mix-ins can be a fun way for everyone to choose what flavor they would like. Here are some ideas:

  • Fresh or frozen blueberries for a burst of juicy sweetness. Actually, almost any berry would be delicious!
  • Ripe banana slices to add natural sweetness and moisture. You could also top with Hazelnut spread!
  • Chocolate chips for an indulgent treat (try mini chips for more even distribution). This is my son’s favorite mix in!
  • Chopped apples paired with a dash of cinnamon for a cozy, spiced flavor.
  • Toasted pecans or walnuts for a satisfying crunch. My daughter loved to also top with peanut butter!

How To Store Dry Pancake Mix Made With Fresh Milled Flour

I do recommend you keep your dry Pancake mix sealed in an airtight container, these do fit in a Quart size Mason jar, as long as you give it a little jostle while you are filling it. Also, these should be stored in the fridge for 7 days, or even the freezer for up to 4 months.

Ingredients To Make Pancake Mix With Fresh Milled Flour

  • 360g Fresh Milled Flour ~3 cups (I recommend Soft White Wheat, Spelt, or Einkorn)
  • 4 tsp baking powder
  • 1/2 tsp salt
  • 24g 2 TBSP Raw Cane Sugar (Fine grind) (You can sub for sugar, honey granules, or maple sugar- any dry sweetener)

Instructions How To Make Fresh Milled Flour Pancake Mix

  1. Firstly, mill your flour. I recommend soft white wheat, but spelt or einkorn would work as well.
  2. I like to put my wide mouth quart size mason jar on my kitchen scale, and zero out the scale.
  3. Then, I put 360g of freshly milled flour into the bottom of the jar. You may need to jostle down the flour so it settles. This mix, when done should be a tight fit into the jar.
  4. On top of the flour, I put the baking powder, salt, and 24g of cane sugar. Gently jostle the jar so that everything fits, and the sugar is below the top of the rim, so that you can put on a lid.
  5. Place an airtight lid onto the jar.
  6. Decorate as desired, you can be as creative as you wish! I have a link to the Recipe Cards you see in my photos that you can print out at home! HERE.

Prepare The Fresh Milled Flour Pancake Mix

  1. Add entire contents of the FMF dry pancake mix into a large mixing bowl.
  2. Then, add 1/2 stick of melted butter (1/4 cup, 52g), 2 eggs, and 2&1/3 cup of buttermilk (540g.) (Alternative to the buttermilk is 2 TBSP white vinegar or lemon juice plus 2 cups of whole milk)
  3. Mix ingredients just to combine, don’t overmix. Allow the pancake mix to sit for 10-15 minutes.
  4. *Optional- Add any mix-ins you enjoy in your pancakes.
  5. Lastly, make the Pancakes, and then enjoy!

Equipment

  • Quart Mason Jar & Air Tight Lid You could use any air tight container or bag
  • Large Canning Funnel This is not required, but will make filling the jars much cleaner & easier.
  • Fabric, Ribbon, and/or Bow *Optional for decoration
  • Gift Recipe Card Tag *Optional- My daughter sells these prefilled out with instructions or blank so you can hand write them. (Holiday & Non Holiday options)

Ingredients
  

  • 360 g Fresh Milled Flour ~3 cups I recommend Soft White Wheat, Spelt, or Einkorn
