This Apple Coffee Cake made with fresh milled flour is so scrumptious! The apples add the perfect hint of fresh fall flavors combined with the cinnamon, sugar, and yellow cake grab your cup of coffee, or if you are like me, your glass of tea! Can I Make This Without The Apples?

Yes, of course, this coffee cake would be equally amazing without the apples if you are looking for that classic coffee cake flavor. I added the apples, because they are ripe and in season right now! In fact, you could probably add other fruits in as well if you are looking for a special treat.

Other Add In Flavor Options To Try

While apples may not be in season, or they just aren’t your jam (haha, you see what I did there, lol) I have a few other add in ingredients that may make your mouth water. Also, let me know in the comments below if you try any of them!

  1. Blueberries: Fresh or frozen blueberries can provide a burst of sweet and tangy flavor.
  2. Raspberries: Fresh raspberries can add a bright, fruity flavor to your coffee cake.
  3. Strawberries: Sliced fresh strawberries can give your coffee cake a sweet and juicy twist.
  4. Bananas: Mashed ripe bananas can add moisture and a subtle banana flavor to your coffee cake.

You may need to reduce the amount of other wet ingredients, to compensate for the added moisture from the fruits. Additionally, consider how the fruit’s flavor and texture will complement the other ingredients in your coffee cake.

Ingredients To Make Fresh Milled Flour Apple Coffee Cake

So, I make this in a smaller 8×8 glass pan which can make the baking time vary. If you are using a metal baking pan, your baking time will probably be closer to the 35 minute bake time. But, if you are using glass like me, it may take the longer 45 minute bake time. Also, if you want to make a larger batch, this can be doubled and made in a 9×13 baking dish.

Cinnamon Crumble Ingredients

  • 1&1/2 cup fresh milled flour 180g (I milled soft white wheat for this)
  • 1/2 cup brown sugar 110g
  • 1/4 cup sugar 50g
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 cup butter 113g (melted)
  • 1/2 tsp vanilla extract
  • 1 large apple 215g (peeled & diced)

Yellow Cake Ingredients

  • 4 TBSP butter 57g (softened to room temperature)
  • 1/2 cup sugar 100g
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup yogurt 125g (I love to use my homemade yogurt- you can find that video HERE to make your own too!)
  • 1&1/4 cup fresh milled flour 150g (I milled soft white wheat for this)
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt

Apple Cider Glaze Ingredients

  • 1/2 cup powdered sugar 56g
  • 1-2 TBSP apple cider

Instructions To Make This Apple Coffee Cake With Fresh Milled Flour

  1. Firstly, mill the flour. (I weigh my wheat berries, then mill the total flour all together, and then just weigh out the amount I need for each part.)
  2. Spray your 8×8 pan with oil or line with parchment paper.
  3. Preheat the oven to 350*F.
  4. Peel and dice the apple.

Make the Cinnamon Crumble Mixture:

  1. Take 180g of the fresh milled flour (1&1/2 cup) and then add brown sugar, sugar, salt, cinnamon, and nutmeg. Whisk together these dry ingredients.
  2. Then, add melted butter, and vanilla and stir together.
  3. Add the apple pieces and stir together, then set aside.

Also, make sure to cream the butter and sugar for the cake portion for the best results!

Make the Yellow Cake Portion:

  1. In a stand mixer (or you can use a hand mixer), add the softened butter and sugar. Cream the butter and sugar until it is lighter in color and fluffy looking (may take 5 minutes.)
  2. Then, add the egg to the creamed butter and sugar, and beat that in.
  3. Add the vanilla, and yogurt, and mix together.
  4. In a separate bowl, add 150g of the flour (should be the rest, about 1&1/4 cup), baking soda, baking powder, and salt. stir until combined.
  5. Slowly, add these dry ingredients to the creamed butter and sugar mixture, and then stir until combined.

Layering all the goodies is just what makes this coffee cake so amazingly delicious!

Assembling & Baking the Apple Coffee Cake

  1. Spread half the yellow cake mixture on the bottom of the prepared baking pan. (This will appear to be a very thin layer!)
  2. Then, add half the cinnamon/apple crumble over the thin layer of cake batter.
  3. Spread the remaining cake batter over the crumble (it will again seem to be a very thin layer. trust the process! lol)
  4. Lastly, spread the second half of the crumble mixture over the top.
  5. Bake for 35-45 minutes (see notes at the bottom about pan size and type of pan.) You want the internal temperature to read 200*F.
  6. Make the Apple Cider glaze.
  7. Whisk together powdered sugar, and 1 TBSP apple cider. You can then add a little more apple cider to thin out the glaze to your desired consistency.
  8. Drizzle apple cider glaze over the top of the coffee cake.
  9. Lastly, Slice and enjoy!

How To Store This Fresh Milled Flour Apple Coffee Cake

So, to store this fresh milled flour apple coffee cake, just cover and leave at room temperature for 1-3 days. If you want longer storage, I recommend you let it cool completely, then slice into square servings. Place the squares in a freezer safe container or bag, and then freeze for up to 3 months. Let come to room temperature to thaw, and enjoy!

    I made a vegan version of this tonight and it was delicious! Thank you for the incredible recipe. I used vegan butter, cashew milk with some apple cider vinegar thickened with a bit of guar gum in place of the yogurt, and a vegan egg replacement. I wasn’t sure with all of the substitutions if it would work, but it did! Thanks for the tip to measure the temperature to make sure it’s done. That and the video were a lot of help.

    I just made this last night and it was so good! It did take almost an hour to put together and into the oven. Then about 50 min to bake in 8×8 metal pan. Just so you’re prepared. The end result was moist, crunchy, soft, and flavorful. The crumble has this incredible texture on top that’s so satisfying. I think sour green apples are the perfect compliment. I might add even more next time!

    Made this for Mother’s Day weekend! It did not disappoint. I made in a 9×13, doubled batch. It’s almost gone in 2 days! Next time will double the cake part and only do half the crumb topping for the top. Absolutely delicious recipe as is! Thank you for sharing.
