In this recipe, I show you how to make a delicious blueberry bread using fresh milled flour, which is packed with vitamins, nutrients, and more flavor! Not only is this bread quick and easy to make, but it’s also healthy and incredibly tasty. Fresh Milled Flour Bread

Bread is a staple food that has been around for centuries. It’s versatile, can be eaten any time of the day, and can be made in different ways to suit different preferences. However, not all bread is created equal. Many store-bought breads are filled with preservatives, bleaching, and other unhealthy ingredients. That’s where homemade bread comes in to play. Not only is it fresher, but you also have control over the ingredients.

How To Make Bread Healthier

One way to make homemade bread healthier is by using fresh-milled flour. Fresh-milled flour is made by grinding whole grains at home with a grain/flour mill. It’s different from store-bought flour, which is often stripped of its nutrients during processing. By milling your own flour, you can retain all the nutrients, fiber, and flavor of the whole grains. Plus, it’s a great way to experiment with different grains and add variety to your diet.

I want to show you how to make a quick, healthy, and delicious blueberry bread using 100% fresh-milled flour.

Ingredients To Make Blueberry Bread With Fresh Milled Flour

  • 2&1/3 cup of fresh-milled flour 270g (I milled about 135g cup soft white wheat, and 135g spelt berries.)
  • 1 teaspoon of salt
  • 1 teaspoon of baking powder
  • 1 teaspoon of baking soda
  • 1 cup of sugar 200g (You can substitute this for 1/2 cup of honey for a bit of a healthier option.)
  • 1/2 cup of olive oil 110g
  • 1 egg
  • 2/3 cup of milk 160g (mix with 1 TBSP of vinegar before, or use Yogurt, Sour Cream, or Buttermilk instead of milk.)
  • 1 teaspoon vanilla
  • 1 cup of blueberries 166g (fresh or frozen, dust with a little flour.)

Instructions To Make Blueberry Bread With Fresh Milled Flour

  1. Preheat your oven to 350°F (180°C).
  2. Firstly, mill the flour.
  3. In a small bowl, prepare the milk by adding 1 TBSP of vinegar to the milk. (This will create a buttermilk like liquid. You could also just use buttermilk if you prefer.)
  4. In a mixing bowl, combine the fresh-milled flour, salt, baking soda, and baking powder, then stir.
  5. In a separate bowl, mix the sugar, olive oil, egg, vanilla, and milk mixture until well combined.
  6. Add the wet ingredients to the dry ingredients and mix until a smooth batter forms.
  7. Coat the Blueberries with a little flour so they will not all sink to the bottom.
  8. Gently fold in the blueberries.
  9. Allow the batter to sit for 10-15 minutes for the fresh milled flour to start absorbing the liquid, and to allow the bran to start to soften.
  10. Pour the batter into a prepare bread loaf pan. (I like to use parchment paper and lightly oil it.)
  11. Bake for 55-65 minutes or until a toothpick inserted in the center comes out clean.
  12. Allow the bread to cool in the pan for 10 minutes before removing it from the pan.

How To Keep The Blueberries From Sinking To The Bottom

Blueberries are a delicious addition to any baked good, but they can sometimes sink to the bottom of the pan while baking, which can result in an uneven distribution of fruit throughout the finished product. To prevent this from happening, there is a simple step you can take. Firstly, toss the blueberries in a tablespoon or two of flour before adding them to the batter. This will help to coat the berries and prevent them from sinking. So, you can ensure that your blueberries stay evenly distributed throughout your baked goods, for a delicious and visually appealing finished product.

I like to lightly dust my blueberries before adding them into the batter, to ensure they do not all sink to the bottom. So they stay evenly distributed as much as possible.

How To Make An Easy Buttermilk Substitute

You can make this bread with buttermilk instead of the milk and vinegar. However, I almost never keep buttermilk on hand, and I found out the perfect substitute for it with things I always have on hand. To make an Easy Buttermilk Substitute:

  • For each 1 cup of regular whole milk, add 1 TBSP of Vinegar. Let it sit for a few minutes, and that is all it takes to make the perfect buttermilk substitute!

Blueberry Bread Made With Fresh Milled Flour Results

    I made this yesterday and subbed the sugar for honey; I also added lemon zest and a squeeze of two lemon wedges. I put the dough into an 8×8 pan and cooked for about 50 minutes-came out great!! I only wish I added more blueberries!

  3. I ended up using all hard red – which is all we had at the moment. It was a little nutty and crispy on the outside, but still delicious. Off to get some more wheat berries to try again! Yum.
