Blueberry Bread Made With Fresh Milled Flour

In this recipe, I show you how to make a delicious blueberry bread using fresh milled flour, which is packed with vitamins, nutrients, and more flavor! Not only is this bread quick and easy to make, but it's also healthy and incredibly tasty.

Equipment

  • 1 4x8 bread pan

Ingredients
  

  • 2&1/3 cup fresh-milled flour 270g I milled about 135g cup soft white wheat, and 135g spelt berries.
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 cup sugar 200g You can substitute this for 1/2 cup of honey for a bit of a healthier option.
  • 1/2 cup olive oil 110g
  • 1 egg
  • 2/3 cup Whole Milk 160g Plus 1 TBSP Vinegar Or use Yogurt, Sour Cream, or Buttermilk instead of milk.
  • 1 teaspoon vanilla
  • 1 cup Blueberries 166g fresh or frozen, dust with a little flour.

Instructions
 

  • Preheat your oven to 350°F (180°C).
  • Firstly, mill the flour.
  • In a small bowl, prepare the milk by adding 1 TBSP of vinegar to the milk. (This will create a buttermilk like liquid. You could also just use buttermilk if you prefer.)
  • In a mixing bowl, combine the fresh-milled flour, salt, baking soda, and baking powder, then stir.
  • In a separate bowl, mix the sugar, olive oil, egg, vanilla, and milk mixture until well combined.
  • Add the wet ingredients to the dry ingredients and mix until a smooth batter forms.
  • Coat the Blueberries with a little flour so they will not all sink to the bottom.
  • Gently fold in the blueberries.
  • Allow the batter to sit for 10-15 minutes for the fresh milled flour to start absorbing the liquid, and to allow the bran to start to soften.
  • Pour the batter into a prepare bread loaf pan. (I like to use parchment paper and lightly oil it.)
  • Bake for 55-65 minutes or until a toothpick inserted in the center comes out clean.
  • Allow the bread to cool in the pan for 10 minutes before removing it from the pan.

Blueberries are a delicious addition to any baked good, but they can sometimes sink to the bottom of the pan while baking, which can result in an uneven distribution of fruit throughout the finished product. To prevent this from happening, there is a simple step you can take. Firstly, toss the blueberries in a tablespoon or two of flour before adding them to the batter. This will help to coat the berries and prevent them from sinking. So, you can ensure that your blueberries stay evenly distributed throughout your baked goods, for a delicious and visually appealing finished product.
