Can You Seriously Make Banana Pudding In The Microwave?

So, Can you really make banana pudding in the microwave? Oh Yes! Yes, you can make pudding in the microwave in less than 15 minutes! It turns out so deliciously warm and smooth. I also made this with some fresh milled soft white wheat flour. So, let me show you step by step how to make a banana pudding (well, technically vanilla pudding) in the microwave!

I love having such a quick go to dessert I can make from scratch, and this easy microwave pudding with fresh sliced bananas and homemade vanilla wafers.

This delicious banana pudding starts out as a vanilla pudding. But, once you add some fresh sliced bananas to it, the true banana flavor shines all the way through! Can You Make Banana Pudding With Vanilla Pudding?

Alright, to make this banana pudding I started out with some simple ingredients to make a vanilla pudding. But, wait I said banana pudding… Yep, we are going to start out with vanilla pudding from scratch. No preservatives here! I want to avoid any fake banana flavor, because to me that tastes very artificial. So, I promise you the banana flavor will come through, but it will come through from fresh sliced bananas!

Ingredients To Make Banana Pudding In The Microwave From Scratch

  • 1/8 cup fresh milled flour 15g (I milled a heaping TBSP of soft white wheat berries)
  • 3/4 cup sugar 150g
  • dash of vanilla extract (HERE is a super simple Vanilla Extract Recipe Video)
  • 2 cups whole milk 490g
  • 2 egg yolks
  • 3 ripe bananas, peeled & sliced
  • 1/2 box of vanilla wafers (HERE is a recipe to make them from scratch!)
  • *optional whipped topping

I wanted the microwave pudding to reach 180*F, this is perfect! It has thickened, and will continue to thicken more as it cools.

Instructions To Make Microwave Banana Pudding From Scratch

  1. Mill your flour
  2. In a very large microwave safe container add flour, sugar, whole milk, vanilla, and egg yolks, mix until incorporated. (Make sure your container is at least double the size the mixture fills, it will bubble up!)
  3. Microwave for 3 minutes, then remove and stir.
  4. Then, put back into the microwave for 3 more minutes.
  5. Remove and stir again.
  6. Place back in the microwave for a 3rd time for 3 minutes.
  7. Remove and stir (be careful it will be hot)
  8. If the pudding has thickened, check the temperature and make sure it is 180*F.
  9. If it is under 180*F, then microwave again up to 3 more minutes until it comes to temp. (Everyone’s microwave is a little different.)
  10. Once the pudding has thickened, the slice some fresh bananas. Layer an 8×8 pan with some vanilla wafers, fresh sliced bananas, then pour the warm pudding over them.
  11. Top with optional whipped topping, more vanilla wafers, and more fresh bananas.
  12. You can serve this warm or put in the fridge to cool.

How To Store Your Microwave Pudding?

You can enjoy this pudding warm or cold. But, if you have any leftovers, then you can store the pudding in a covered dish, in the fridge for up to 4-5 days. The vanilla wafers will soften, and the banana flavor will get more intense over time.

I have a lid that fits this baking dish perfectly, but you could also just cover yours and pop it in the fridge.

Can I Make Pudding From Scratch On The Stovetop?

Yes, If you prefer to make this recipe on the stovetop, just make sure to stir often and don’t let it scald or curdle. Heat on Medium heat, and keep stirring it until it has thickened and reaches 180*F.

Can I Make This Microwave Pudding In a 9×13 Pan?

Sure, To make this recipe in a 9×13 pan (because you will probably want more! lol) Just double the recipe. Put the mixture in an even larger microwave safe container, and microwave for 3 minutes at a time, stirring in between, for 4 intervals. Until the pudding thickens and reaches about 180*F.

You can make this with regular all purpose flour, use just shy of 2 TBSP of it.
