Adorable & Easy Gingerbread Muffins Shaped Like Little Houses
Take a look at these Adorable & Easy Gingerbread Muffins that are shaped like little houses! Of course, you could make this recipe with a regular muffin tin, and they are Delicious! But, for a little fun, we decided to try this Gingerbread House Silicone Mold out that a friend of ours so kindly let us borrow. To sum up, I think they turned out pretty darn cute!
Why You Should Try This Easy Gingerbread Muffins Recipe
Yes, it’s true, I used this cute little silicone mold. But, this recipe will work perfectly for a regular muffin pan. So, this recipe will make 12 regular sized / shaped muffins. Also, you could use a different variety of fresh milled flour. This recipe is written for Einkorn, however, it would work great with soft white wheat flour, or spelt, or even a combination of both! Also, the molasses adds that deep rich Gingerbread taste! So, don’t be afraid to try it out!

Why Einkorn?
Einkorn is said to be the original wheat, or “virgin” wheat. It is tricky to use, but once you get the hang of it, you may come to love it. Also, it has a sweet nutty flavor. Because of Einkorn’s different structure, it has a higher protein, yet lower potential to form gluten. So many people have found that they are able to tolerate Einkorn, even with a gluten sensitivity. (*It should be noted that a true Celiac should not eat any wheat, including Einkorn.) Because of this, Einkorn recipes have been in higher demand. There are some Einkorn brands I have not been happy with, but others I have rally come to like. This photo shows the difference between Whole Einkorn (smaller& pointier), and hard white wheat. So It seems, Einkorn can be tricky to find sometimes. But, I have been happy with the Einkorn I bought HERE.
Ingredients For This Recipe
- 2&1/4 Cup fresh milled Einkorn Flour (250g) (Mill 1&1/3 cup Einkorn)
- 1 tsp salt
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 cup olive oil
- 1 egg
- 1 cup plain yogurt – I love to use homemade yogurt, you can see how HERE (or could use buttermilk)
- 3/4 cup brown sugar
- 1 tsp vanilla (I like to make mine, you can see how HERE)
- 1 tsp fresh grated ginger
- 1 tsp cinnamon
- 1/8 cup molasses
Ingredients For Glaze
- 1 cup powdered sugar
- 1 pinch of salt
- 1 tsp vanilla extract
- 2 TBSP milk
Instructions For Making These Easy Gingerbread Muffins
- Firstly, Preheat Oven to 400*F
- Mill Flour (I milled 1&1/3 cup Einkorn (250g) to make a total of 2&1/4 cup fresh milled Einkorn flour
- Add salt, baking soda, and baking powder to the flour.
- Then add oil, egg, yogurt, vanilla, and sugar. Stir to combine.
- Next, add fresh grated ginger, cinnamon, molasses and stir.
- Bake for 18-20 minutes
- Let cool in pan for 5- 10 minutes, then remove to a cooling rack.
- Once cooled, you can add glaze and decorate as desired.

Einkorn Gingerbread Muffins
Ingredients
