Einkorn Gingerbread Muffins

Take a look at these Adorable & Easy Gingerbread Muffins that are shaped like houses! Of course, you could make this recipe with a regular muffin tin, and they are Delicious! But, for a little fun, we decided to try this Gingerbread House Silicon Mold out that a friend of ours so kindly let us borrow. I think they turned out pretty darn cute!

Ingredients
  

  • 2&1/4 Cup Fresh Milled Einkorn Flour 250g (Mill 1&1/3 cup Einkorn)
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 cup olive oil
  • 1 egg
  • 1 cup plain yogurt - I love to use homemade yogurt (or could use buttermilk)
  • 3/4 cup brown sugar
  • 1 tsp vanilla I like to make mine
  • 1 tsp fresh grated ginger
  • 1 tsp cinnamon
  • 1/8 cup molasses

Ingredients For Glaze

  • 1 cup powdered sugar
  • 1 pinch salt
  • 1 tsp vanilla extract
  • 2 TBSP milk

Instructions
 

  • Preheat Oven to 400*F
  • Mill Flour (I milled 1&1/3 cup Einkorn (250g) to make a total of 2&1/4 cup fresh milled Einkorn flour
  • Add salt, baking soda, and baking powder to the flour.
  • Then add oil, egg, yogurt, vanilla, and sugar. Stir to combine.
  • Next, add fresh grated ginger, cinnamon, and molasses and stir.
  • Bake for 18-20 minutes
  • Let cool in pan for 5- 10 minutes, then remove to a cooling rack.
  • Once cooled, you can add glaze and decorate as desired.

Notes

You could use other fresh milled flours like soft white, spelt, or a combination of both.
If you are using commercial white flour, you may need to adjust your flour amount slightly.
