Einkorn Gingerbread Muffins
Take a look at these Adorable & Easy Gingerbread Muffins that are shaped like houses! Of course, you could make this recipe with a regular muffin tin, and they are Delicious! But, for a little fun, we decided to try this Gingerbread House Silicon Mold out that a friend of ours so kindly let us borrow. I think they turned out pretty darn cute!

- 2&1/4 Cup Fresh Milled Einkorn Flour 250g (Mill 1&1/3 cup Einkorn)
- 1 tsp salt
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 cup olive oil
- 1 egg
- 1 cup plain yogurt - I love to use homemade yogurt (or could use buttermilk)
- 3/4 cup brown sugar
- 1 tsp vanilla I like to make mine
- 1 tsp fresh grated ginger
- 1 tsp cinnamon
- 1/8 cup molasses
Ingredients For Glaze
- 1 cup powdered sugar
- 1 pinch salt
- 1 tsp vanilla extract
- 2 TBSP milk
Preheat Oven to 400*F
Mill Flour (I milled 1&1/3 cup Einkorn (250g) to make a total of 2&1/4 cup fresh milled Einkorn flour
Add salt, baking soda, and baking powder to the flour.
Then add oil, egg, yogurt, vanilla, and sugar. Stir to combine.
Next, add fresh grated ginger, cinnamon, and molasses and stir.
Bake for 18-20 minutes
Let cool in pan for 5- 10 minutes, then remove to a cooling rack.
Once cooled, you can add glaze and decorate as desired.
You could use other fresh milled flours like soft white, spelt, or a combination of both.
If you are using commercial white flour, you may need to adjust your flour amount slightly.
