Pumpkin Donuts Made With Fresh Milled Flour is the perfect warm and cozy treat! My family loves to enjoy them year round! However, there is something special in the air around Fall, and there’s no better way to celebrate the season than with some delicious baked pumpkin donuts. These Pumpkin Spice Cake Donuts are the perfect balance of sweet and Spicy, baked to perfection! And of course, you can’t have the perfect pumpkin donuts without some nutritious fresh milled flour!
Using Fresh Milled Flour To Make Pumpkin Spice Cake Donuts
Using fresh milled flour has many benefits. Not only does it enhance the flavor of your baked goods, but it also increases their nutritional value. Also, Fresh milled flour is rich in nutrients like fiber, protein, and B vitamins, which boosts the power of Pumpkin! These Baked Pumpkin Spice Cake Donuts (Doughnuts) are sure to keep you feeling full and energized.
Ingredients To Make These Pumpkin Donuts With Fresh Milled Flour
- 1&1/2 cups fresh milled flour 180g (I milled about 1 cup of soft white wheat to get this amount, I think Spelt would be delicious here too!)
- 1 tsp baking powder
- 1/2 tsp baking soda
- 2 tsp Pumpkin Pie Spice (You could use cinnamon, ginger, and nutmeg separately if you prefer)
- 1/2 tsp salt
- 3/4 cup pumpkin puree 180g (unsweetened, plain)
- 1/2 cup brown sugar 100g
- 1/4 cup sugar 50g
- 2 eggs, room temperature
- 1/2 tsp vanilla extract
- 1/4 cup olive oil 57g (or other neutral oil)
- 1/4 cup melted butter 57g
Ingredients For The Pumpkin-Spice Sugar Coating
- 1/4 cup butter 57g
- 1/2 cup sugar 100g
- 1&1/2 tsp Pumpkin Pie Spice
- 1&1/2 tsp Ground Cinnamon
- 1/8 tsp salt (if using unsalted butter)
Instructions For Making These Fresh Milled Flour Pumpkin Spice Cake Donuts
- Firstly, Mill the Flour. I chose to use soft white wheat, but Spelt flour would be amazing too!
- Then, preheat your oven to 350* F, and spray your donut pan with nonstick cooking spray.
- To the freshly milled flour add in the baking powder, baking soda, Pumpkin Pie Spice, and salt. Stir to combine.
- In another bowl, mix together the melted butter, olive oil, pumpkin puree, brown sugar, sugar, eggs, and vanilla extract.
- Then, add the dry ingredients to the wet ingredients, stirring until the batter is well combined and smooth.
- Divide the batter into the prepared donut pan cavities (using a spoon or piping bag), filling each mold about 3/4 full. Then, put to the Center baking rack of the oven.
- Bake for 12-15 minutes, or until the donuts are golden brown and a toothpick inserted into the center comes out clean.
- Remove the pans from the oven and allow the donuts to cool in the pan for 10 minutes, then carefully transfer them to a wire rack to cool completely. (15 to 20 more minutes.)
Pumpkin Spice Sugar Coating
- While the Donuts Cool, make the coating.
- Place the butter in a microwave safe bowl, and fully melt. (This should take about 25-30 seconds.)
- Then, in a separate shallow bowl, stir sugar, pumpkin pie spice, cinnamon, and salt(if using unsalted butter).
- Coat the donuts lightly on each side with the melted butter. Then, lightly brush on with a pastry brush.
- Then put donut in the spiced sugar mixture, and coat all sides. Gently shake off any loose or excess spiced sugar mixture.
- Place on the tray, and then continue this process with the rest of the donuts.
- Lastly, enjoy!

Can A Cake Donut Be Made Healthier?
Do you love the taste and texture of a cake donut, but tired of having to go buy them and pay a lot of money for them. Then, after you eat them, feel bloated and “ugh.” I understand, and I was there too! I can tell you that I made 2 MAJOR changes to my Donuts, and now they leave me filled with energy, and not so bogged down! These are the TWO major changes I made to my Donut game!
- I make them at home, and BAKE them, then this way I am not consuming all the bad fats from the deep fryer, and they taste better too!
- The most important change I made was to use Fresh Milled Flour! This increases the nutrition and the fiber in my donuts so I no longer need to feel guilty about eating them. And, because they are full of fiber, they leave me feeling full and satisfied, and not having the feeling like I need to eat 6! Just one will normally do it for me to satisfy that donut craving!
How Can I Bake Cake Donuts In My Oven?
So, how do I bake my cake donuts in my oven at home? I found these simple affordable Donut Pans! The ones I have are nonstick, and my donuts slide out perfectly every time! Also, I can make a half batch of 6 or make 12 and share or freeze any leftover donuts. Leftover Donuts? What’s that? Am I right? lol

These look delicious. I don’t have a donut pan and was wondering if there is another way to bake them.
You could bake them in a mini muffin pan, or only fill a regular muffin tin about 1/4 of the way up. They of course won’t have the same shape, but they should still be delicious!
Super delicious. Canโt believe how soft they were. I accidentally doubled the brown sugar using half light brown and half dark brown but they tasted so scrumptious Iโm gonna keep making them this way.

all I can say is WOW these are so moist and amazing, I haven’t had a donut in 10 years these knock it out of the park. I have gotten off a lot of sugar and just do 72 percent chocolate so if that is your case you can probably cut the sugar in half, my 3 grandkids 14 and under whipped these up while I was at exercise class, I tried to eat half but went back for the whole thing, there goes my workout benefits.
