Pumpkin Donuts - Fresh Milled Flour

Pumpkin Donuts Made With Fresh Milled Flour is the perfect warm and cozy treat! My family loves to enjoy them year round! However, there is something special in the air around Fall, and there's no better way to celebrate the season than with some delicious baked pumpkin donuts. These Pumpkin Spice Cake Donuts are the perfect balance of sweet and Spicy, baked to perfection! And of course, you can't have the perfect pumpkin donuts without some nutritious fresh milled flour!

Equipment

  • 1 donut pan (I used 2 donut pans that each held 6 donuts)

Ingredients
  

  • 1&1/2 cup Fresh milled flour 180g I milled about 1 cup of soft white wheat to get this amount, I think Spelt would be delicious here too!
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 2 tsp Pumpkin Pie Spice You could use cinnamon, ginger, and nutmeg separately if you prefer
  • 1/2 tsp salt
  • 3/4 cup pumpkin puree 180g unsweetened, plain
  • 1/2 cup brown sugar 100g
  • 1/4 cup sugar 50g
  • 2 eggs room temperature
  • 1/2 tsp vanilla extract
  • 1/4 cup olive oil 57g or other neutral oil
  • 1/4 cup melted butter 57g

Pumpkin-Spice Sugar Coating

  • 1/4 cup butter 57g
  • 1/2 cup sugar 100g
  • 1&1/2 tsp pumpkin pie spice
  • 1&1/2 tsp ground cinnamon
  • 1/8 tsp salt if using unsalted butter

Instructions
 

  • Firstly, Mill the Flour. I chose to use soft white wheat, but Spelt flour would be amazing too!
  • Then, preheat your oven to 350* F, and spray your donut pan with nonstick cooking spray.
  • To the freshly milled flour add in the baking powder, baking soda, Pumpkin Pie Spice, and salt. Stir to combine.
  • In another bowl, mix together the melted butter, olive oil, pumpkin puree, brown sugar, sugar, eggs, and vanilla extract.
  • Then, add the dry ingredients to the wet ingredients, stirring until the batter is well combined and smooth.
  • Divide the batter into the prepared donut pan cavities (using a spoon or piping bag), filling each mold about 3/4 full. Then, put to the Center baking rack of the oven.
  • Bake for 12-15 minutes, or until the donuts are golden brown and a toothpick inserted into the center comes out clean.
  • Remove the pans from the oven and allow the donuts to cool in the pan for 10 minutes, then carefully transfer them to a wire rack to cool completely. (15 to 20 more minutes.)

Pumpkin Spice Sugar Coating

  • While the Donuts Cool, make the coating. Place the butter in a microwave safe bowl, and fully melt. (This should take about 25-30 seconds.)
  • Then, in a separate shallow bowl, stir sugar, pumpkin pie spice, cinnamon, and salt(if using unsalted butter).
  • Coat the donuts lightly on each side with the melted butter. Lightly brush on with a pastry brush.
  • Then put donut in the spiced sugar mixture, and coat all sides. Gently shake off any loose or excess spiced sugar mixture.
  • Place on the tray, and continue this process with the rest of the donuts.
  • Lastly, enjoy!

Notes

You can skip the Pumpkin Spice sugar coating all together, or use a vanilla glaze, that glaze recipe is on my blog on the Chocolate cake donut recipe.
You can use regular all purpose flour in this recipe if you don't have a way to mill flour, just use 1&1/3 cup white flour instead.
