Peanut Butter Dark Chocolate Kiss Cookies With Spelt
Wow! I was amazed when I tried these Simple Peanut Butter Dark Chocolate Kiss Cookies Made With Spelt! When I tasted these cookies, I really enjoyed them. It was the perfect balance of sweetness, and the dark chocolate kiss on top really made this a delicious cookie! Think Reese Cup in cookie form!
2&1/2cupFresh Milled Spelt Flour300g (Mill 315g of Spelt Berries)
1cupbutter2 sticks (225g)
3/4cupbrown sugar150g
3/4cupsugar150g
1cupPeanut Butter250g
2eggs
1TBSPVanilla
1&1/2tspbaking soda
1tspsalt
1Package of Dark Chocolate Kiss Candies
Instructions
Preheat Oven to 375* F
Mill Spelt Flour
Add salt & baking soda to the flour
Cream butter and sugars with the peanut butter for 1-3 mins until creamy.
Scrape sides of bowl as needed.
Next, add eggs, one at a time, until fully combined. Then add Vanilla, and mix to combine.
Then Slowly add flour mixture, mix until combined, and no dry flour is showing.
Roll dough into 1 inch balls (Or use a cookie scoop)
Place dough balls onto a lined baking sheet about 2 inches apart from each other.
Bake for 8-9 mins.
After they are baked, and still warm, place a Candy Kiss in the center of the cookie and press down slightly.
Let the cookies cool for 5 mins on the baking sheet, then transfer to a cooling rack.

You can try other whole wheats & grains in this cookie as well. If using all soft white wheat by weight it will be the same amount, but if measuring by volume, you will need to add an additional 1/2 cup of soft white wheat flour.For a Traditional Peanut Butter cookie, you can omit the Chocolate Kiss, and just press the top with a fork in one direction, then the other direction to make hashmarks on the dough balls before baking.
