I want to share with you my secret to making the best beer bread ever, and you guessed it... using freshly milled flour. Equipment

  • 1 4x8 bread loaf tin

Ingredients
  

  • 3 cups of fresh milled flour 360g (I milled about 1 cup of soft white wheat berries, and 1 cup of hard white wheat berries)
  • 1 TBSP of baking powder
  • 1/2 tsp baking soda
  • 1&1/2 tsp of salt
  • 1/3 cup of sugar 67g
  • 1 bottle 12 oz of beer (room temperature)
  • 1/3 cup of melted butter 76g
  • 2 TBSP *Optional - Pour 2 TBSP more melted butter on top of loaf before baking.

Instructions
 

  • Preheat your oven to 375°F.
  • Prepare a 4x8 loaf pan with parchment paper or oil the pan.
  • In a mixing bowl, whisk together the fresh milled flour, baking powder, baking soda, salt, and sugar until well combined.
  • Add the beer and melted butter to the dry ingredients and mix until well combined.
  • Pour the mixture into a greased bread pan.
  • *Optional - Pour 2 TBSP melted butter over the top of the mixture.
  • Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the bread cool in the pan for 10 minutes before removing it from the pan.

Alternative substitution options for Beer:
  • Carbonated water or soda water: This is a good substitute for beer as it provides carbonation and a similar texture to the bread. You can use plain or flavored carbonated water, depending on your preference.
  • Seltzer Water: This provides the same carbonation as beer, which helps the bread rise and gives it a lighter texture. If you prefer a plain, mild-flavored bread, seltzer water can be a great substitute for beer.
